Authentic Maryland crab cake recipe. Lightly spiced crab meat combined with egg and seasoned breadcrumbs. Crab cakes are sauteed until light golden brown and crispy outside.
Ingredients -
1 pound Maryland Backfin Crabmeat
1 cup Italian Seasoned Breadcrumbs
1 large or 2 small Eggs, beaten
1/4 cup Mayonnaise
1 teaspoon Worcestershire
1 teaspoon Dry Mustard
1/2 teaspoon Salt
1/4 teaspoon Pepper
Vegetable Oil for frying
Preparation:
1. Combine all ingredients except crabmeat in medium mixing bowl, mix well.
2. Gently fold in crabmeat.
3. Form into 6 crab cakes.
4. Saute in hot oil over medium heat, until gold brown on both sides, 4-5 minutes per side.

Chesapeake Crab Cake Sauce
In a small bowl, mix together 6 tablespoons mayonnaise, 2 teaspoons Old Bay seasoning, 3 teaspoons freshly squeezed lime juice, and several dashes hot sauce until well combined. Store in refrigerator until ready to serve.

Chardonnay Cream Sauce
Boil 1 1/2 cups Chardonnay and 1/3 cup chopped shallots in medium saucepan until mixture is reduced to 1/2 cup, about 10 minutes. Fold in 1 cup whipping cream and reduce to sauce consistency, about 10 minutes. Salt and pepper, to taste.
