New Orleans Crab Cakes

Well worth the time and effort, this is a very delicious recipe combining seasoned bread crumbs, eggs, fresh vegetables with the finest fresh crab meat. Make these crab cakes year round. Perfect for serving at dinner parties and brunch celebrations.
Ingredients -
 
1/2 cup Green Onion
1/2 cup Bread crumbs
1/2 cup Yellow Onion
1/4 cup Mayonnaise
1/4 cup Celery
1/4 cup Bell pepper
1/3 cup Whipping Cream
1 Egg
1 tablespoon Cajun Mustard
1 tablespoon Lemon Juice
1 tablespoon minced Garlic
1 teaspoon Sugar
New Orleans seasoning, to taste
dash of Worcestershire Sauce
Salt and Fresh Ground Black Pepper, to taste
1 pound Lump Crab Meat
 
Preparation:
 
1. Combine all ingredients, gently folding the crab in last, mixing well.

2. Shape equal size crab cakes.

3. Cover bottom of saute pan with oil. Heat oil over medium heat.

4. Place crab cakes in hot oil and saute 4 to 5 minutes per side or until golden brown and cooked through.

 
Variations and Recipe Ideas:
Sprinkle a little more New Orleans type seasoning on the cooked cakes.
 
 



Cooking Tip

Orange Dill Sauce
In a medium bowl, combine 2 tablespoons light or low-fat mayonnaise, 1 teaspoon grated orange zest, 1 tablespoon fresh orange juice, and 1 teaspoon minced fresh dill weed. Cover and refrigerate at least one hour. Serve cold.

Cooking Tip

Sauce Remoulade
Combine 1 cup mayonnaise, 3 tablespoons vinegar, 2 tablespoons grated horseradish, 1/3 cup finely chopped onions, 2 tablespoons finely chopped parsley, 1 tablespoon paprika, 1/3 cup finely chopped celery, 2 tablespoons ketchup, 1 tablespoon grated garlic and salt and pepper, to taste. Mix well and serve.
