Savannah Crab Cakes

Nice blend of fresh vegetables and crab meat, mixed with cracker crumbs and seasoned with a little heat making delicious crab cakes perfect for any occasion.
Ingredients -
 
1 pound Crabmeat, picked free of shell
1/2 cup Ritz Crackers, crushed
3 Green Onions, finely chopped, with tops
1/2 cup finely chopped Bell Pepper
1/4 cup Mayonnaise
1 Egg
1 teaspoon Worcestershire Sauce
1 teaspoon Dry Mustard
juice of 1/2 Lemon
1/4 teaspoon Garlic Powder
1 teaspoon Salt
dash of Cayenne Pepper
Flour, for dusting
1/2 cup Oil
 
Preparation:
 
1. Combine all ingredients in large glass mixing bowl, except flour and oil.

2. Form into equal size crab cakes.

3. Dust crab cakes with flour.

4. Saute in hot oil over medium heat, until golden brown, 4-5 minutes per side.

Cooking Tip

Spicy Crab Cake Sauce
Combine 1/4 cup mayonnaise and 1/4 cup plain yogurt in a small bowl. Mix well. Season with 1 teaspoon curry powder, 1 teaspoon ground ancho chile pepper, and 1/2 teaspoon garlic powder. Stir in 1 tablespoon mango chutney. Cover and chill 30 minutes.

Cooking Tip

Cream Sauce
Combine 1/2 cup mayonnaise, 1 tablespoon lemon juice, 1 tablespoon milk, 2 teaspoons dill weed, 1/4 cup sour cream, 1/2 teaspoon sugar, 1/2 teaspoon salt, and 1/2 teaspoon white pepper. Blend well. Chill for 30 minutes.
