Toms Crab Cakes

Simple crab cake recipe and two wonderful sauces for topping them off.

Ingredients -
1 pound Crab Meat
1/2 cup seasoned Breadcrumbs (more or less as needed)
1 Egg
1 1/2 tablespoon Mayonnaise
1/3 teaspoon Black Pepper
1 teaspoon Worcestershire Sauce
1 teaspoon Salt
Oil for Sauteing
 
Preparation:

1. Combine crabmeat, breadcrumbs, egg, mayonnaise, Worcestershire, salt and pepper.

2. Mix well.

3. Shape into 8 equal size crab cakes.

4. Refrigerate on wax paper for at least one hour.

5. Saute in hot oil over medium heat until crab cakes are golden brown, a few minutes per side.

Crab Cake Tips -
Dill Sauce

Combine 1/4 cup mayonnaise, 1/4 cup sour cream, 1/2 teaspoon dill weed, 1 1/2 teaspoons lemon juice in a small bowl; stir until blended. Makes 1/2 cup.


Crab Cake Tips -
Orange Butter Sauce

Stir together first 1/4 cup orange zest, 1 1/2 cups fresh orange juice, 1 teaspoon kosher salt, 1 teaspoon freshly ground pepper in a small saucepan and bring to a boil. Cook over medium-high heat until mixture is reduced to 1/4 cup. Remove from heat. Gradually whisk 1 cup butter, chilled and cut into 1-inch pieces into orange juice mixture. Serve immediately.
